The Chinese staple – tomato, chilli and soya sauce – lends the flavour. The chicken is predictably batter-fried and stirred in with sautéed mushrooms and bell peppers. Dong'an chicken is versatile, it can be a hearty starter or an accompaniment to fried rice.

Dong'an Chicken

Ingredients

Chicken 200 gms

Mushroom 50 gms

Bell peppers 30 gms

Onion 50 gms

Celery 5 gms

Tomato sauce 1 tsp

Chilli sauce 1 tsp

Soya sauce a drop

Ginger 1 tsp

Garlic 1 tsp

Cabbage to garnish

Grapes to garnish

Salt and pepper to taste

Make a batter with corn flour, flour, egg and salt.

Method

Slice the chicken into long, thin strips and batter fry. Heat oil in a pan and sauté ginger, garlic, celery, onion and bell peppers in it. Add tomato, chilli and soya sauce. Stir in the sliced mushroom. Cook well, add the fried chicken and mix well. Serve garnished with cabbage and grapes.
